Ultimate Immune Boosting Vegan Soup Recipe Potato Onion Soup
Here’s a favourite go to remedy for me; hearty, wintery potato soup, I’m already feeling better.
Ingredients:
- 4-5 large potatoes
- 1 large onion [or two small]
- 1 head of garlic
- Vegan Butter[substitute oil if you don’t have]
- Salt
- Pepper
- Turmeric
- CBD Tincture [optional]
Directions:
Dice your onion and begin sautéing in a large pot. While your onions are cooking, begin to dice all but 1 of your potatoes.
Once your onions are translucent and smelling delicious, fill the pot halfway full of water and let come to a boil. While you are waiting dice your final potato into 1/4” thin bits. You want this potato to boil into mush, in order to give your soup that thick and hearty consistency.
One the water has come to a boil put your potatoes in and let cook. At this point begin adding salt, pepper, and turmeric to taste. [Depending on how sick I am is how much turmeric I will include].
Get your garlic cloves ready then dice up half of the head and put into the pot. If you have a garlic press, press the other half and add to the pot otherwise just slice and add like the first half.
Periodically taste test while your soup is cooking to add more flavor. I enjoy adding a lot of pepper to mine. Also check the water and add more if need once the potatoes soften.
Once the smaller potatoes begin to the dissipate and the soup gets thick, it’s ready!
Pour yourself a bowl and add 20mg from your CBD tincture of choice and enjoy!
