A roasted chicken is a simple and cost effective meal to make, whether you are looking to spice up your weekly meal plan, or are making an elevated evening for two. Our roasted chicken is for adults only and requires cannabis butter already made, so make sure to have some on hand. This recipe is quick, easy, and guarantees that the chicken won’t be the only thing roasted tonight.

Directions

Preheat oven to 475℉ prior to preparing your chicken

In a small bowl combine butter, spices and a squeeze of lemon juice. Gently separate the skin from the flesh of the chicken with your fingers. Rub the infused and spiced butter between the skin and meat evenly.

Half the lemon and onion and stuff them in to the chicken cavity. Use kitchen twine to tie the legs together at the ankle.

Salt and pepper the exterior of the chicken. Place in roasting pan alone or with desired vegetable medley.

Immediately after placing the chicken in the oven lower the temperature to 400℉. Cook for 1 hour and 20 minutes or until your chicken reaches an internal temperature of 165℉

Let chicken sit for 15 minutes before carving to allow the juices to rest

Prep Time: 5-10 minutes

Cook Time: 1 hour 20 minutes

Rest Time: 15 minutes

Total Time: 1 hour 45 minutes

Ingredients

1 4 lb roasting chicken (you can use a larger bird, simply adjust the cooking time accordingly)

1 lemon

1 onion

1 tsp. Garlic powder

1 tsp. Italian seasoning

1 tsp. Paprika

½ tsp. Cayenne pepper

¼ cup infused cannabis butter

Salt and pepper to taste

Pro-tip: After enjoying your bird, save the carcass for making soup stock or bone broth. Once cooled, simply freeze the bones for a later date. If you didn’t use the chicken juices for gravy freeze them too for extra flavour.
